Helmed by the charismatic chef Dave Pynt, a Perth native known for his mastery of open-flame cooking, Burnt Ends has garnered international acclaim. Boasting a Michelin star since 2018, it currently ranks among the elite on the World’s 50 Best Restaurants List and Asia’s 50 Best Restaurants List. But the true allure of Burnt Ends lies not just in the meticulously crafted, wood-fired dishes, but in the restaurant’s captivating ambience.

Gone are the days of a mid-century colonial military barracks. In its place stands a 7,000-square-foot testament to Pynt’s vision — a fiery stage for his culinary storytelling. Pynt collaborated with fellow Australian, designer Emma Maxwell, to bring his unconventional vision to life. Her design brief? “Fire, skulls, and AC/DC.”

Maxwell, unfazed by the limitations of the existing structure, embraced the challenge. The result is a theatrical masterpiece — a restaurant, bakery, private room, and cocktail bar seamlessly integrated into a cohesive, fiery whole. The space is a feast for the eyes even before the first dish arrives. The dim lighting sets the mood, punctuated by a dramatic 5,000 black lava stone tubular installation overhead.

Quirky details abound. A custom-built, 4-tonne wood-burning oven roars at 1,000 degrees, a testament to Pynt’s fiery culinary passion. Cabinets of curiosities overflow with an eclectic mix of Pynt’s personal cookbooks, Faberge eggs, and custom glassware. Skulls, a recurring motif, add a touch of the macabre, while walls clad in contrasting panels of petrified wood and aged timber hint at the restaurant’s history and the transformative power of time.

“When I design a restaurant,” Maxwell explains, “I create a three-dimensional world that reflects the chef and their ethos.” For Pynt, fire is the elemental force that shapes his cuisine. Maxwell masterfully translates this concept into the very fabric of the space. “Burnt Ends is about fire, smoke, heat, and metamorphosis,” she says. Each area within the restaurant plays its part, offering a unique narrative as guests explore. Just as the flames transform ingredients, so too do the spaces evolve, the timber darkening with age, a smoky aroma permeating every corner.

The newly opened cocktail bar serves as the final act of this theatrical experience. Designed in collaboration with theatre designer Marc McIntyre, the bar draws inspiration from London’s Victoria and Albert Museum, with a playful twist.
